Starting figures are BakeServe's own records, 29 June to 27 September 2026. Money is at selling price, because the records hold no costs yet; with ingredient prices and the wage and electricity bills, the same levers can show profit.
How the Deluxe bake is set
Average gap between the bake and what sold, in loaves a day. Bread made off target turns into damages, returns or empty shelves, which are counted below, so this is not added to the total.
Yield
About 16.7 batches a day. The records assume 216 loaves a batch; Zubair is counting the real number this week. Yusuf: about four more litres of water per 50 kg bag gives about four more loaves.
Damages and returns
Today about ZMW 28,714 a month: proof room, oven, slicing and packing.
Returned damaged today about ZMW 493 a month: a high share of what is made, but small in money.
Returned damaged today about ZMW 22,506 a month in total.
Together, a month at selling price
Each loaf is counted once: the general returns cut applies after the small-line cut. Profit will be lower than selling price; costs come next.
